      In January preparation for the actual season begins. A network of plastic tubing is used to collect sap from maples on the hillsides.  |

      In Mid February, when daytime temperatures climb above freezing, the maple trees are tapped. A hole about 7/16" in diameter and 3" in depth is drilled in the tree.  |
